Mini Breakfast Part 1

Today was my friend Nick Snow’s birthday! So we decided to take a trip down to Misquamicut Beach and I agreed to make the group breakfast before we left. My original plan was to make everything miniature size and the first recipe I did was one for mini frittatas which were by far the cutest things I’ve ever made.

Mini Frittatas Recipe

Adapted from Giada De Laurentiis

  • 8 large eggs
  • 1/2 cup whole milk
  • 1/4 tsp black pepper
  • 1/4 tsp salt
  • 1/2 cup shredded cheddar cheese
  • 2 tbs bacon bits (I didn’t really measure, this is just a guess)
  1. Preheat the oven to 375° F
  2. Spray 2 mini muffin tins (each with 24 cups) with nonstick spray
  3. Whisk the eggs, milk, pepper, and salt in a large bowl to blend well
  4. Stir in the cheese and bacon bits
  5. Fill prepared muffin cups almost to the top with the egg mixture
  6. Bake until the egg mixture puffs and is just set in the center, about 8 to 10 minutes
  7. Using a rubber spatula, loosen the frittatas from the muffin cups and slide the frittatas onto a platter. Serve immediately
