Triple Chocolate and Funfetti Gooey Butter Cookies

Oh my goodness does it feel good to be home from school and actually able to update my blog! I’ve been home a couple times since I updated it last but whenever I do come home, I’m always out and never seem to be able to make time to bake :(. In case you were curious as to how I’m adjusting to “college life,” I absolutely hate it. I never thought I could miss the way my parents yell at the television while watching football or the stupidity of drivers on the road…yet for some reason I do. Not to mention it’s almost impossible for me to bake here, which makes it difficult to stay sane from time to time. Anyway, I managed to set aside quite a bit of time to today to get some serious baking done (FINALLY!!!!).
Triple Chocolate Gooey Butter Cookies

  • 1 (8-ounce) brick cream cheese room temperature
  • 1 stick unsalted butter, at room temperature
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 3.9 oz package chocolate pudding mix
  • 1 (18-ounce) box Betty Crocker’s Triple Chocolate Cake Mix
  • 1 tbs milk (to help it all come together)
  • 1 1/2 cups semi-sweet chocolate chips
  1. Preheat oven to 350º F
  2. In a large bowl with an electric mixer, cream the cream cheese and butter until smooth
  3. Beat in the eggs. Then beat in the vanilla extract
  4. Beat in the cake mix and milk to combine
  5. Mix in the semi-sweet chocolate chips
  6. Cover and refrigerate for 2 hours to firm up so that you can roll the batter into balls
  7. Roll the chilled batter into tablespoon sized balls and then roll them in confectioner’s sugar (optional)
  8. Place on an ungreased  cookie sheet, 2 inches apart
  9. Bake 12 minutes. The cookies will remain soft and “gooey”
  10. Cool completely and sprinkle with more confectioners’ sugar, if desired

Work fast or the dough will get veryyy sticky!

Funfetti Gooey Butter Cookies

  • 1 teaspoon vanilla extract
  • 1 (18-ounce) box Pillsbury Funfetti Cake Mix
  • 1 1/2 cups white chocolate chips
  1. Preheat oven to 350º F
  2. In a large bowl with an electric mixer, cream the cream cheese and butter until smooth
  3. Beat in the egg. Then beat in the vanilla extract
  4. Beat in the cake mix until combined
  5. Mix in the white chocolate chips
  6. Cover and refrigerate for 2 hours to firm up so that you can roll the batter into balls
  7. Roll the chilled batter into tablespoon sized balls and then roll them in confectioner’s sugar (optional)
