White Chocolate Chip Pudding Cookies

I wasn’t supposed to go home this weekend with Thanksgiving break coming up on Tuesday but my mom got her brand new Juke on Friday night and she wanted to show me so she brought me home :). I didn’t tell Kamil I was coming home so he was sure surprised to see me Saturday morning! But he had to work quite a bit this weekend but that left a lot of time for me to bake so of course I took advantage of the opportunity.

Everyone seems to love chocolate chip cookies with vanilla pudding mix in them because it makes the consistency very cakey. But I thought it would be interesting if I used white chocolate pudding mix instead and rather than using semisweet chocolate chips, I decided to go for an all white chocolate chip cookie using white chocolate chips only! White Chocolate Chip Pudding Cookies

Adapted from All Recipes

  • 4 1/2 cups all-purpose flour
  • 2 teaspoons baking soda
  • 2 cups butter, softened
  • 1 1/2 cups packed brown sugar
  • 1/2 cup white sugar
  • 2 (3.4 ounce) packages instant white chocolate pudding mix
  • 4 eggs
  • 2 teaspoons vanilla extract
  • 4 cups white chocolate chips
  1. Preheat oven to 350 degrees F (175 degrees C). Sift together the flour and baking soda, set aside
  2. In a large bowl, cream together the butter, brown sugar, and white sugar. Beat in the instant pudding mix until blended. Stir in the eggs and vanilla
  3. Blend in the flour mixture
  4. Finally, stir in the chocolate chips
  5. Drop cookies by rounded spoonfuls on ungreased baking sheets
  6. Bake for 10 to 12 minutes in the preheated oven. Edges should be golden brown
